Love what you've done with this Stephen and it made me look up the Digitech Trio - cool pedal, like a band in a box. In the band I was in before Covid, we often used to use Simple Man as the basis for a jam session if the singer couldn't make rehearsal - it's a great song to use for changing the style and improvising solos.

for the song your production is so good that I don't even want to listen to the original

the first thing that caught my ear is the sound contrast between the acoustic guitar and this very fast bass with a big sound

the second thing is your voice and the reverb used on the solo voice part or end of sentence, it is quite subtle

Jp... the reverb I did by copying the track 2 times and panned the copies left and right...at much lower volume than main center vocal... added reverb to one left and chorus to other...
