It's just a midi controller, not a pitch-to-midi converter. Its purpose is to allow you to control midi devices from the controls on the Guitar Wing. It doesn't process the guitar's sound at all so there's no need for a midi pickup.

You could use it to trigger a hardware or software synthesizer for special effects. Or you could use it to change the parameters of a software or hardware midi device. For example, in the following video, a guitar is plugged into an Eventide H9 effects pedal which has midi support. Instead of bending down to adjust the controls on the pedal, the presenter is able to control the pedal's parameters from the Guitar Wing.

Of course, most standard effects pedals don't have midi support so you couldn't use the Guitar Wing to control just any old pedal. But some multi-effects units have midi support (Fractal Audio's Axe-Fx, Kemper profiler, Roland VF-1 and maybe some of the Roland GT series) and you should be able to use the Guitar Wing to switch effects patches, adjust parameters, etc.

But I think where the Guitar Wing would really shine is when used in conjunction with a midi pickup and guitar synth such as the Roland GR-55. You could use the various controls of the Guitar Wing to instantly switch patches and alter the parameters of the selected synth patch.

And in case some people didn't notice it in the videos, one of the coolest features of the Guitar Wing is its built-in 3D motion detector. This lets you alter a midi parameter merely by moving your guitar. You can see in one of the videos I posted earlier how the performer alters the sound by raising and lowering the guitar's neck.

Ok so you plug into the pad and the sleeve on the guitar then transmits Bluetooth to the the pad which has the signal... I think.
It must be digitech that's working on the chip.

The guitar in the video that chapperz66 posted has a Fishman TriplePlay wireless midi guitar controller attached to it. Here's what the YouTube page says:

So the Fishman TriplePlay is sending midi note data to Ableton Live and the softsynths. And the Guitar Wing is selecting patches and altering the parameters of the softsynths, Axe FX 2, and Ableton Live.
