How/why would a person record an electric guitar on stereo tracks?
Is that for panning?

You need to use two tracks if you're using a stereo effect on your guitar. If I'm not mistaken, the only stereo guitar effects on the original Micro BR are the tap delay and auto-pan (see page 71 and page 75 of the Micro BR manual). But other recorders have a lot more stereo effects (chorus, doubling, flanger, harmonist, pitch shifter, etc.) You can record stereo effects in mono if you want to, but they sound much better in stereo. Try it!

It's for stereo effects like anything with a flange or a chorus.  Adds another dimension to the sound (literally).

Despite acquiring a fairly significant amount of boutique effects pedals off of eBay over the last 6 months, I invariably just go to my Zoom G1XNext pedal, which is a digital effects processor with a stereo out, where I can usually get just the sound I need quickly.

Saying that, one of those stereo tracks wouldn't have lost anything in mono (crunchy one at the end).
