The steps are similar but critically I think the "Inter App Audio" that the video refers to is an app built for iOS (Apples mobile / tablet / phone operating system) and doesn't appear to work or even appear at all on the Apple iMac Desktop operating software. I have a feeling this is what the people that make the Midi Guitar software are talking about when they said somewhere that they will upgrade the software to address compatibility issues.

Sorry, I assumed you were running it on an iPad. You're right that Inter-App Audio is only available in iOS.

Fortunately, there are some programs available for macOS to provide audio routing between applications. I use JACK Audio Connection Kit in Linux and it works great, though it might seem a bit complicated. There are versions for macOS and Windows too.

A much simpler program for the Mac is BlackHole by existential audio.

See: https://existential.audio/blackhole/support/#route

Both JACK and BlackHole are free open-source software.

Thank you for your support as always 64. I will investigate (won't be for a day or 2, I have a hospital appt) and see if that helps!
