Black Pudding Fishcakes.

    I'll presume y'all can cook...

      Smoked Haddock (undyed if you can)
      Any other white meaty fish (Cod, Pollock, Sea Bass etc etc)
      Maris Piper Potatoes
      Flat leaf Parsley
      Breadcrumbs
      Good quality Black Pudding (from the butchers, non of that supermarket shite)

    I like to pre-cook my fish a little, wrapped in foil, salt, pepper and butter, hot oven for about 10 mins.
    Boil and mash spuds
    In a bowl, add the mash, fishy flakes, chopped parsley and a little more salt and pepper. Dash in a little cream or milk to get a pliable consistency.
    Add cubed Black Pudding
    Pat into 'cakes' and roll in breadcrumbs.
    Fry y'cakes on a medium heat for about 8 minutes per side, careful not to let 'em break up.
    Serve two at a time, with a fried egg on top of each, plus salad etc.

     If you've made lots of mixture, cover it, it'll keep for a couple of days in the fridge.
     Alternativley, buy fishcakes, served on a bed of cooked Black Pudding and topped with fried egg. Cheat!!

they are great for making pate. but it takes a few days to set.

but get some olive oil, brown some garlic and chopped onions and mushrooms add the chicken liver and some brandy a bit of fresh ground pepper and serve with a nice crisp salad. yum yum.

OsCKilO

Marinade in crushed garlic, honey, soy, paprika, crushed chilli and a bit of lemon ( measures to taste. ) for 30 minutes before pan frying on a medium to high heat in olive oil. Cook until the honey has formed a nice brown glaze on the little buggers.

Serve with sauté potatoes and a little salad.

Oh.... And sprinkle a little finely chopped raw red onion on the cooked livers when the are still hot. Not sure why but it just sets everything off perfect.
