I just had a look on Sweetwater to see how the US price of the FV-500H compares to the EV-5 and I was surprised to find that it's less!

That makes no sense to me. The EV-5 is made of plastic and it's only an expression pedal. The FV-500H is made of die cast aluminum and it's both an expression pedal and a volume pedal. How the heck can the EV-5 cost $10 more? Weird!
